If you’re looking for a cold weather beauty that’s a nutrition powerhouse, Dwarf Blue Curled Kale (Brassica oleracea) is a great choice. The ruffled leaves stand up to severe cold, even overwintering with the help of mulch in zones 4 and 5. Plants spread 20-35 in. wide and stand 15 in. tall. Harvest 53-65 days from transplant. Planting and Harvesting Tips:
Plants grow best in full sun and cool moist soil that is enriched with compost. Sow in late summer for a fall harvest or early spring for a summer harvest. Plant 1/4 to 1/2 inch deep, allowing one foot between plants and two feet between rows.

Like most winter crops, the flavor improves after the first frost. In fact, we recommend that you do not harvest until after at least one hard frost. Pick outer leaves as they develop or harvest the entire plant. Small leaves are tender and can be used in salads. Larger leaves can be cooked like spinach.
