Endive & Escarole
These flavorful, slightly bitter greens are a delicious contrast in mixed, loose-leaf salads. With its broader leaves, heirloom escarole takes to braising as well as fresh eating. Curly endive, long a home garden favorite, is now center-stage at gourmet restaurants as frisée. More nutritious than most salad greens — they’re rich in folate and vitamin K — endive and escarole are cool weather crops grown like lettuce. Best harvested before summer heat or started late in the season and harvested in the fall.
