One of the prettiest sights in the garden! Canton Bok Choy (Brassica rapa var. chinensis) has thick, white stems and deep green leaves. This oriental cabbage is great stir-fried and heaped next to a serving of brown rice. Heat tolerant. (50 days)

Planting and Harvesting Tips:
This cool weather vegetable does best planted in early spring or late summer. Sow no deeper than 1/4 inch in rich, well-drained soil. Space plants 6 to 12 inches apart in rows 18 to 24 inches apart.

To harvest, pinch or cut the leaves just above the soil surface and allow to grow back. Continue harvesting until plants begin to lose flavor. Young plants provide the sweetest leaves and stems. Once plants bolt (flower), they will become bitter.
